A major coffee-producing country, Mexico remains a little-known and little-valued origin. And yet, its remoteness from Ecuador makes its mid-altitude terrain a haven for racy, fruity coffees. Among the most notable terroirs is Chiapas, bordering volcanic Guatemala, and a sanctuary of native forests ideal for forest coffees.
