Are the coffees organic?
90% of our coffees come from biodynamic agriculture and the remaining 10% from organic agriculture. Our approach to excellence is based on an approach inherited from the wine industry: all our coffees are single-variety, single-cell, single-fermentation, and come directly from recognized producers who are committed to quality. Sustainable agriculture would be the basis of the product, gustatory excellence its objective.
Our coffees are not certified because the roasting workshop is not labeled but we work with higher standards than the labels. We are preparing a move of the workshop and the new workshop will be certified.

Is there a recommended temperature?
Onthe description of each of our products, you will find the ideal temperature according to our tests. This should be put into perspective depending on the machine and the water, but it gives an idea. It is important to know that the higher the temperature, i.e. above 92°c, the less aromatic complexity there is, and the lower the temperature, the more perceptible the acidity.
For gentle method preparations such as V60 and Chemex, choose a temperature between 88° and 90°.

The Chemex, the espro press or the V60 dripper will allow you to make your soft extractions perfectly. To make cold brew, we recommend the Hario drip machine or the Hario bottle.

In addition to its original design, the Rok has the particularity of being manual, the pressure is obtained manually thanks to the arms of the machine and this makes its little effect in front of the guests. For those who like automatic machines, we suggest the De Longui Dynamica coffee maker or the fully automatic coffee maker Jura.
