Burgundy is often talked about for its wines from Beaune, Nuits or Meursault, for its great tables from Vézelay to Dijon, but less about its exceptional breeders.
However, in the Burgundy forest, not far from the vineyards, there is a place where every gourmet dreams of going, and where every cook knows the exceptional poultry: it is the Ruchotte farm.
Founded in 2002 by Frédéric Ménager, the Ruchotte farm is a jewel box of animal and, since 2012, vegetable biodiversity. At La Ruchotte, the best old breeds of chickens are bred, including the famous Barbezieux, Coucou de Rennes, La Flèche, Le Mans, but also the Ardennes turkey, and the tasty, rare and black Gascon pigs, as well as the beautiful Solognot sheep.
Frédéric's approach was simple: after 10 years of working in haute-gastronomy (at Laurent, Alain Chapel, Pierre Gagnaire...) where he learned the fundamental importance of product quality and creativity, he moved to the other side, and settled with his family in Burgundy to raise the best of meat.
As a passion is not easily abandoned, he proposes a magnificent and very popular table d'hôtes on weekends where amateurs from all over the world try to reserve and savor the impeccable cuisine of the chef and his exceptional vegetable and meat products.
The wines are of course part of the party and the winegrower friends think to deepen unceasingly a list of wonders.
The icing on the cake is that for the past few weeks, the binge ends with a coffee from L'Arbre à Café, an exceptional Djebena, served with a piston (Espro Press)!
