Gilles Pudlowski, founder and owner of the eponymous Guide Gastronomique, is one of the central figures in French gastronomy. He has been tirelessly visiting tables and restaurants for several decades and is known for his freedom of tone.
With the 2018 edition, he gives us a double honor. The first, that of creating a title of Best Roaster of the Year, something rare and unheard of for a guide and even a gastronomic media, so important is the sponsorship of industrial coffee brands. Gilles Pudlowski thus puts coffee back in its place, at the center of the game and reminds us of its fundamental importance at the end of a meal!
The second is to present this first Roaster of the Year Award to L'Arbre à Café.
His reasons are passionate and relevant: each time he has a crush, that he is seized by emotions and truth at a table, he finishes his meal with a coffee from L'Arbre à Café, and has done so for years. The chef of the year, Christophe Pelé, chef ** of the Clarence, is partly responsible for this, as we have the chance, the joy and the honor to serve him for almost 10 years.
Finally, Gilles Pudlowski values the work of a whole team of enthusiasts, invested every day in their work by a pleasure of requirement, precision and transmission. What unites the team is undoubtedly what the gastronomic critic has highlighted: the awareness of knowing that they are actors in a chain of values, which at L'Arbre à Café, really and fully begins with the plantation and with the producers and continues through to the chefs and food artisans.
Pudlo celebrates the coffee, the spirit and the New French Art of Coffee that L'Arbre à Café has been promoting for the past 9 years by offering gourmet coffees, made for restaurateurs, and all gastronomies.
Thanks to him!
